HISTORY
The tradition of enjoying small bites before a main course stretches back centuries across various cultures. History shows that Athenians in the 3rd century BC enjoed buffets with items like sea urchins and pickled vegetables. These early versions weren't strictly appetizers, but a glimpse into the idea of pre-meal nibbles.
Appetizers as we know them gained popularity in Europe around the 17th and 18th centuries, particularly in France. The term "hors d'oeuvre," meaning "outside the work" in French, reflects how these dishes were seen as separate from the main event. Meanwhile, the word "appetizer" itself emerged in the 19th century, solidifying the concept of a course designed to stimulate the appetite before a larger meal.
Today, appetizers come in a vast array of forms, reflecting global cuisines and serving styles, but their core purpose – to prepare the palate and enhance the overall dining experience – remains the same.
